Asparagus Gruyere Pizza with Garlicky Whipped Ricotta
I made you pizza. Fridays should always be pizza days.
Or in my case, apparently everyday should, since I’ve literally eaten this pizza everyday since I made it. Still hasn’t gotten old. It’s that good.
Plus, there’s nothing better than sitting on the couch eating a piece of this pizza while binge watching HBO shows. I just started watching Girls, yesterday (*ahem* and I am already halfway through Season 2…), and I hate it and love it at the same time. But, I actually cannot stand the character, Hannah. I find her absolutely unbearably selfish. Is this a common opinion? I don’t even know since I’m so new to this show. But I actually totally love most of the other characters. Do yo guys watch this show? Who do you like best?

But this pizza! It was inspired by, and adapted from, one of my favorite food blogs, How Sweet It Is. She makes the best stuff. Like a pizza with ricotta and asparagus on it. Mine’s slightly different but so super good!
It starts with the crust. I really wanted a thicker and fluffier crust than that of my BBQ Chicken & Cheddar Pizza, for this one because well…I’m on a fluffy bread kick. The dough recipe is only slightly different, but I definitely left it a bit thicker when rolling it out.
The dough is rubbed with some olive oil, then spread with a super tasty mixture of ricotta and garlic whipped in a food processor. The toppings include a layer of nutty gruyere cheese, asparagus ribbons, and just a sprinkling of mozzarella.
Because you guys know I love spice, I topped mine with some red pepper flakes…
Um, and then some sriracha because I’m crazy and nothing is ever spicy enough
…but you totally don’t have to. Mikey suggested a drizzle of balsamic reduction, which I think would be awesome! Someone try that and report back, please!

Ingredients
- 1 cup + 2 tbsp warm water
- 1 tbsp active dry yeast
- 1 tbsp honey
- 1 tbsp olive oil
- 3 cups unbleached all-purpose flour
- 1 tsp salt
- 1 cup ricotta cheese
- 2 garlic cloves
- juice of 1 small lemon
- salt & freshly ground pepper
- 4-5 ounces gruyere cheese, shredded
- 1/2 lb. thick asparagus spears (1/2 a bunch), woody stems broken off and shaved with either a mandoline or vegetable peeler
- 1 and 1/2 ounces mozzarella cheese, shredded
Instructions
- In the bowl of an electric mixer fitted with the dough hook, stir together the water, yeast, honey, and olive oil. Allow it to sit for 10 minutes until nice and foamy. Add in 2 and 1/2 cups of the flour and the salt and beat on low until it starts to come together. Turn up the mixer speed and beat in the additional 1/2 cup of flour. Continue to beat until the dough forms a ball on the hook and pulls way from the sides.
- Grease a large bowl, Form the dough into a ball and place in the bowl, turning to coat. Cover loosely with plastic wrap and place in a warm place to rise for 1 to 2 hours, until doubled in size.
- Punch the dough down and roll it out on a floured surface into a pizza-y shape. Smooth a light layer of olive oil over top.
- Preheat your oven, with the pizza stone inside, to 450 degrees.
for the pizza:
- In a food processor, combine the ricotta, garlic, and lemon juice. Blend for a few seconds until whipped. Season, to taste with salt and pepper.
- Spread the ricotta mixture onto your pizza.
- Top with the gruyere, the asparagus, and the mozzarella.
- Bake for 30-40 minutes until the cheese starts to brown, and the crust is cooked through.

Oh mah GOSH! How amazing does this pizza look?? I have always wanted to try asparagus on pizza and I'm thinking that's gonna have to happen and soon. Love that whipped ricotta "sauce". Pinning and can't wait to try this for pizza night!
