Butterfinger Cookie Sandwiches
Cookie season!
Yet another reason why the holidays are the most wonderful time of the year. I mean, a time of the year where everyone bakes delicious delights and gives them to each other? Yes. Count me in. Forever.
Actually, I’m flying back to Florida for Christmas tomorrow, and then Wednesday my mom is throwing her annual cookie exchange!
It’s kind of become a totally sick joke at this point, because for the last three years, I have somehow always gotten in at like 1am the night before my mom’s cookie exchange. It’s a little ridiculous since it’s never the same day every year.
I end up waking up at 6am the morning of the exchange and attempt to crank out 120+ cookies. I’ve already informed my mom that I just don’t think the crack of dawn cookie baking is going to happen this year. Her response? “If you don’t bake, you don’t take!” But ya know, that’s just fine with me because both my sisters and my mom will be bringing home cookies, so I think we’ll have plenty.
But speaking of cookies, these cookie sandwiches are kinda crazy awesome. The cookies themselves are chewy and completely packed with Butterfingers pieces. The best parts are the pieces that melt and form like a crispy candy pool attached to the cookie (like that middle one…OMG yum).
The cookies are amazing on their own, and definitely don’t need a frosting, but just because you don’t necessarily need something doesn’t mean you shouldn’t add it anyway!
The frosting filling is a basic buttercream, but it has not only more Butterfingers in it, but also creamy peanut butter. It’s dangerously addictive—-warning ya now!

Oh gosh, these look and sound positively addicting!! I love Butterfingers but have never baked anything with them. Your mom’s cookie exchange sounds fun (but intense!) – one of these days I’ll have to try hosting something like that. Safe travels!
AH intense is such the word! Maybe that’s why everyone just sits around and drinks at the actual event, hahah too stressed from baking hundreds of cookies!
And you totally NEED to bake with Butterfingers! It somehow makes them even better!
