If you’re not familiar with PAX, it’s basically a big video game expo. Since Mikey works in the industry (he makes Halo), it’s always fun to go and see friends from around the country, and all the new stuff coming to the game market. This year, we dressed up!

You may recall me mentioning sometime last year that Mikey was making a Daft Punk helmet. Over a year later his costume finally got finished with the indispensable help of our friends, and he got to wear it to this year’s PAX! His costume was easily one of the best there (the LEDs in the helmet are controlled through a bluetooth iPhone app!), and tons and tons of people stopped him for photos!
I was a Lichtenstein-inspired pop art girl. I went with a fairly easy make-up only costume because I didn’t exactly have time to put something as amazing as Mikey’s together. I think it turned out pretty well for a last minute thing!
So yes, Mikey took Friday off for the convention (which was Friday through Monday), then his office had Tuesday and Wednesday paid time off due to desks being moved. Basically, our weekend just ended, haha. It was exhausting, but tons of fun!
But let’s talk about this sandwich!
It’s my recreation of an amazing deli sandwich from one of my favorite places in Sarasota, Southside Deli. I actually posted the original on my Instagram a few months ago! It’s a pretty basic deli sandwich—chicken, cheese, lettuce, tomato if you want—but the thing that makes it totally amazing is the Sage-Peach mayo. It’s so simple, but crazy good.
I also think you totally have to use shredded iceberg lettuce, like the original. It somehow makes it better, don’t ask me why! I also found and used the exact deli meat they used (Boar’s Head Everroast Chicken), because I’m a weirdo, and also I love Boar’s Head stuff, but I’m willing to bet that most any deli chicken would work.
Oh, and the only way this could have tasted better would be if I had used some homemade bread.
Yield: about 1/2 cup mayo (enough to make about 4 sandwiches)
