Chocolate-Almond Popcorn
Flavored popcorn is seriously underrated.
I mean caramel corn, kettle corn, and even cheesy popcorn are all common enough, but you don’t see a lot of other types around. Or at least I don’t. Is it just me? I’ve only recently noticed some gourmet popcorn shops opening around Seattle, so maybe people are starting to come around?
In any event, I’m all over the stuff. This is only the first of four crazy popcorn recipes that I will be sharing with you this week, and it’s my personal favorite.
This stuff is addictive. It’s crunchy, sweet, a teensy bit salty, and the best part? Chocolatey. I bet it would make a really fun topping for ice cream.
I just love how shiny this popcorn is; I think it’s so pretty! It would look beautiful stuffed into a cellophane bag, tied with a red ribbon, and given as a gift.
Ingredients
- 1/2 cup popcorn kernels
- 1 and 1/2 cups whole unsalted, roasted almonds
- 1/2 cup granulated sugar
- 1/2 light corn syrup
- 4 tbsp unsalted butter
- 2 tbsp unsweetened cocoa powder
- 1 tsp kosher salt
Instructions
- Pop popcorn kernels in either a microwave popper (I use this one), or on the stove.
- Preheat oven to 200 degrees. Line a baking sheet with a silicone baking mat; set aside.
- Place the popcorn and almonds in a large bowl.
- In a medium saucepan, combine the sugar, corn syrup, butter, cocoa, and salt. Cook over medium heat stirring constantly, until the mixture comes to a simmer.
- Pour the hot sugar mixture over the popcorn and almonds and toss to coat.
- Pour the popcorn mixture onto the prepared baking sheet. Bake for an hour, stirring every 20 minutes, until almost dry. Allow to cool on the baking sheet.
