So, I’ll be honest…I have no idea if these delicious, addictive little bar things are “snack cake.” In fact, according to Wikipedia’s definition, they’re definitely not…but it sounds like a cute name, and wtf do I call these?! They’re like a love child between peanut butter banana bread and a brownie—all the flavor of banana bread, with that delightful chewy texture of a brownie. But they aren’t brownies… because they are not chocolate.
…Blondies. They are totally blondies…just came to me. But now we’ve committed to “snack cake,” so screw it, we’re running wild with that name!
These are actually a variation of my Chocolate-Peanut Butter-Banana Bread Fudge Bars (see? I guess I didn’t know how to accurately classify the first iteration, either), which is one of my favorite recipes I have ever created. But, as amazing as chocolate is, I wanted a version without it; thus, these were born!
Guys, they are so good. They are definitely 100% a dessert, and go great in an ice cream sundae (use one of these as a replacement for the banana in a banana split!!), but if you’re like me, you can lie to yourself and call it breakfast, too. They’re really good with a cup of coffee…I won’t tell if you don’t.
