Roasted Fig Crostinis with Honey and Blue Cheese
Are you aware of how delicious figs are?
I don’t know if you’ve tried my other fig appetizer—Fresh Fig, Micro Arugula, and Mascarpone Bruschetta—but it’s kind of the best thing, ever. Well, it was…until these crostinis came into my life. I don’t like to pat myself on the back too much, but, I kind of hit the nail on the head, here.
Don’t you just love when you find something that is oh-so-simple to make, but tastes like heaven? These use less than a handful of ingredients, come together in a snap, and will be one of the best things you will ever put in your mouth. Pair them with a glass of Pinot Noir and you will be in pure bliss.
If you think you won’t like these because you aren’t a fan of blue cheese, hold your tongue. My sister does not like blue cheese and she ate 4. There is something magical that happens with this particular combination of ingredients. It’s salty-sweet-savory nirvana. My mother has already decided that I’ll be making them at least 2 more times this week. I think these are just one of those things that you have to taste to believe.
Ingredients
- bread (I used a hoagie roll that I sliced, but a baguette would be perfect)
- extra virgin olive oil
- 4 black mission figs (fresh)
- crumbled blue cheese
- honey
- salt and pepper
Instructions
- Slice the bread into 1/2-inch slices. Brush one side with olive oil, sprinkle with salt and pepper, and broil on a baking sheet in the oven until the top is golden. Remove and set aside.
- Set oven to 350 degrees.
- Quarter the figs. Place them on a baking sheet and drizzle with olive oil. Sprinkle with salt and pepper. Bake for 10 minutes, then remove from the oven. Sprinkle the figs with blue cheese and place back in the oven for 5 minutes, or until the cheese is melted.
- Top each crostini with 2 fig quarters (make sure to scrape up any cheese stuck to the baking sheet!).
- Melt a bit of honey in the microwave until runny, and drizzle it all over the tops; serve!
