Smashing Strawberry Tres Leches Cupcakes
Happy Tuesday, I made you the most delicious cupcakes, ever!
What’s better than strawberries and cream? Strawberries and tres leches. Fact. My computer keeps autocorrecting “leches” to “leeches.” Another fact.
These are the kind of dessert people will talk about for a while.
You guys know that I send Mikey to work with all sorts of goodies on a regular basis (I can’t have sweets lingering around here with me for too long or I’ll eat them all). Everything has been well-received, but these were raved about. A number of Mikey’s co-workers gushed about these to me upon meeting me for the first time. They really are that good.
The cake portion is spongy and perfect for soaking up the delicious tres leches mixture (sweetened condensed milk, evaporated milk, cream, and a bit of vanilla). After popping the soaked cake into the fridge for a bit it transforms into a delicious sticky, pudding-like delight.
Then, the cupcakes are topped with a fresh, smashed strawberry mixture (not at all optional), and a little dollop of whipped cream (totally optional)—it’s phenomenal.
Also, can we just all just stop for a second and admire how freakin’ adorable these cupcake wrappers and matching flags are?! Super precious. Especially since I’m pretty sure I found them at like T.J. Maxx!
