Turkey and Tomato Panini
Ready for your new favorite turkey sandwich?
This panini is packed with flavor. It’s zesty and fresh thanks to perfect roma tomatoes, lemon juice, and fresh basil. It’s creamy and rich from a combination of mayo Greek yogurt, and just a bit of parmigiano reggiano. And guess what? It’s only 250 calories. Crazy, right?
This is actually a sandwich I’ve been making for years. I have no idea why it’s taken me so long to share it. For some reason I tend to do that with simple recipes like this. It’s like they’re so easy, I don’t even think about writing the recipe up. It’s silly, I know, so I’m trying to change that!
I hope you guys don’t mind the sudden influx of “healthy” recipes showing up around here. I feel like I tend to be “known” for my super decadent desserts (which I will still sprinkle in!), but those don’t exactly help you feel great about prancing around in a bikini on a cruise ship, haha. Sooooo, things will be mainly healthy-ish around here for a couple months, at least until after my cruise. Though, I think a slew of good-for-you meals and desserts is kinda what people like around summertime, right?
But, don’t worry, I will never compromise flavor! If something doesn’t taste amazing (even if it’s super good for you), why eat it? Or at least that’s my thoughts on the matter
Back to this sandwich for a second! You actually don’t have to press this into a panini. It’s great with just fresh bread, but I do love the way the tomatoes get all soft and warm, and the crunch from the golden toast is a nice counterpoint. Also, if you’re not into mayonnaise, feel free to use all Greek yogurt. I would probably use a yogurt with some fat though so that you still get the creaminess.
I think they key to this sandwich is really good tomatoes, so this is the perfect time of year. If you do make this, I would love, love, love to see a photo on Instagram, Twitter, or Facebook!
Ingredients
- 1/2 tbsp mayo
- 1/2 tbsp fat-free Greek yogurt
- juice from half a lemon (I used a Meyer lemon)
- 1 tbsp chopped fresh basil
- 1/2 tbsp grated parmigiano reggiano
- salt & freshly-ground pepper
- 2 slices bread (I use Dave's Killer Bread in their Thin-Sliced variety)
- 2 ounces oven-roasted deli turkey
- 1 roma tomato, sliced
Instructions
- In a small bowl, mix together the mayo, yogurt, lemon juice, basil, and cheese. Season to taste with salt and pepper.
- Spread 1/2 of the mixture on each slice of bread. Arrange the tomato slices on one piece, and the turkey on the other. Close the sandwich.
- Press in a panini press for 3 minutes, until golden brown. (You could also do this in a pan just like a grilled cheese.)
